Al Bronzo Spotlight Series: Orecchiette
Barilla Al Bronzo®, our new imported, bronze die pasta from Italy is officially in market for foodservice! This month we dive into the story behind orecchiette, and what chefs are doing with this classic shape.
The name Orecchiette translates to “little ears” in Italian, looks like its name, with little ear-like cups that cradle and capture sauces. Al Bronzo® Orecchiette’s bronze die technique results in a traditional look and texture that makes it a great match for more rustic dishes.
Orecchiette originated in the southeastern coastal region of Puglia, where it is commonly served with rapini (also known as broccoli rabe), and often the spicy local pork sausages in a classic pairing. It also combines well with other ingredients from the Italian south, such as beans from cannellini to borlotti, and savory seasonings like anchovies, capers and olives. The thicker-walled structure makes it ideal for American-style pasta salads as well.

Orecchiette with Za'atar Lamb Ragu and Smoked Harissa Chickpeas Zaatar is a surprisingly versatile spice blend from the middle east that’s definitely enjoying a moment as an on-trend flavor. It happens to be fantastic on a pasta platform, as here with lamb, smoked harissa chickpeas, and sheeps-milk Romano cheese all nestling gently inside the Al Bronzo® Orecchiette.
Miso Orecchiette with Garlicky Asian Vegetables and Furikake We love this dish from Chef Dustin Hilinsky of Inspire Brands – the umami-rich miso-cream sauce is a warm food hug for a quick pick-up of leafy greens and edamame. Orecchiette’s little cups embrace the sauce, with a punchy accent of furikake and red pepper flakes.
