ORECCHIETTE
Orecchiette (pron. Or-uh-key-ET-ay) or “little ears” are a signature shape of the Puglia region. Paired famously with sausage and broccoli rabe, the cup shape is ideal for holding sauces, while the grooves on the top surface do the same. It combines well with other ingredients from Southern Italy, such as bean varieties ranging from cannellini to borlotti, and salty-savory seasonings like anchovies, capers, and olives. The thicker-walled structure makes it ideal for American-style pasta salads as well.
