CHEF'S NOTE
Itameshi, Japanese for “Italian food,” is a style of Japanese cooking rooted in Italian cuisine but localized with Japanese flavors, ingredients and sensibilities. Rather than fusion in the conventional sense, it is Italian food—especially pasta—expressed with a distinctly Japanese accent.
This dish is a great example of how local flavors can be highlighted without straying too far from the cuisine that inspired it. Instead of the traditional use of olive oil, I chose to highlight brown butter throughout the dish in several ways: in the cooking sauce, whipped as a finishing element on the plate and incorporated into the tuile for added texture.
