Orecchiette are one of the most representative pastas of Puglia cuisine but, thanks to their deliciousness, are loved all over Italy. Because of their hollowed shape, smooth inside and grooved outside, they are versatile and hold the sauce perfectly.
Orecchiette were created from an antique culinary tradition of Puglia. And it is in Puglia that they are also called "strascinate" because, by tradition, the housewives dragged them, one by one, over the pastry board with their thumb or a particular knife that had no handle and a rounded tip, called "sferre". Orecchiette are one of the most representative pastas of Puglia cuisine but, thanks to their deliciousness, are loved all over Italy.
